Every Halloween, the equivalent of 18,000 tonnes of edible pumpkin flesh goes to waste because 60% of consumers do not use the flesh of the pumpkins after carving it. As well as the delicious flesh which can be used for a variety of dishes, you can also roast the seeds for a delicious and easy snack. After you’ve got creative with pumpkin carving, why not make a tasty meal from your leftover pumpkin?

Pumpkin and lentil soup
This is a great base recipe which can be tweaked for your taste. Experiment with flavours by adding some chilli for an extra kick, or ginger for a warming soup. Use coconut cream/milk instead of crème fraiche for a dairy free soup.

A super simple and easy to make curry. It’s also a great recipe to make a batch ahead of time and use throughout the week.
Pumpkin, cranberry and red onion tagine
A warming recipe for colder autumnal days. Also perfect with quinoa for a gluten free option.
Spiced pumpkin cake
A sweet treat which is a crowd pleaser. Instead of a can of pumpkin puree, you can easily make your own by cooking and blending the flesh of a pumpkin.
Spicy squash and apple chutney
For the more adventurous. Bonus points if you or a neighbour have an apple tree with surplus apples that need to be used up!
